The Agrigento Olive Tree Candle is inspired by sunset in two places: our Olive grove at Flamingo Estate, and the ancient Olive groves surrounding Agrigento’s Valley of the Temples, on the southern coast of Sicily.
But they are closer than you might think. At the Estate, our Olive Trees are descendants of old Mediterranean varieties, grown from cuttings whose ancestors took root long ago in Europe. At sunset, their silver leaves catch the last light, the trunks turn dark and sculptural, and the whole garden smells green, floral, woody, and alive.

We fell in love with this special Balsamic for its rich, silky texture and deep, sweet flavor profile. It’s the sort of flavor you can only get from aged Balsamic, made in oak barrels over long Winters. The Trebbiano and Lambrusco grapes are grown organically and hand-selected by Balsamic maker Nicolo Verrini. His passion for Balsamic was passed down by his grandfather, who started making Balsamic Vinegar back in the 60’s. Nicolo is a firm believer that the best Balsamic begins with the best grapes, and his goal is to preserve the beauty that Mother Nature provides. I use it on EVERYTHING — cheese, salads, and sometimes on a spoon in the middle of the night when nobody is watching!

Flamingo Estate has taken its raw, antioxidant-rich Wildflower honey and infused it with the iconic Morita Chile, grown organically at nearby Windrose Farms. Morita Chiles are ripe jalapeños that have turned red and fruity. They are then dehydrated, rehydrated, and smoked with applewood from the farm's trees.

Flamingo Estate's hand-crafted biointensive Blackberry Vinegar is fermented from brambles of wild-growing organic Triple Crown and Chester Blackberries, using native yeast and aged in oak barrels. This vinegar, culled from simple and traditional methods, is raw and alive with a fruity tang that lingers on the tongue. Enjoy on salads, in sauces, or as a shrub.

We traveled to New Zealand and harvested the world’s most powerful Mānuka Honey from remote Mount Taranaki. This was a complicated task: we helicoptered our hives onto the native bushlands at the base of the mountain, and let the Bees work. The impossible to reach landscape creates the most potent, highly active Honey independently tested to contain a whopping 830 mg/kg of MGO along with other potent phytocompounds.
The result is the creamiest whipped texture and an earthy, herbaceous flavor. It’s extremely rare — ‘monofloral’ meaning that it comes solely from the nectar of the Mānuka, which blooms just around 4 weeks per year. The creaminess is obtained through a slow churning process with nothing else added, ensuring a longer shelf life without crystallization. Known to support internal immune system. Enjoy by the spoonful or as a face mask for rich hydration and cleansing.

The result is a complex Olive Oil that is rich, bright, and perfectly spicy, made by extracting the oil from Artichoke Garlic and infusing it in an exclusive harvest of Coratina Olives. The unfiltered, cold-pressed Olive Oil is grown and harvested in Ojai, CA. It is robust and peppery, and when mixed with the buttery complexities of the Garlic, it adds the perfect finishing touch to roasts, hearty salads, and pasta dishes.

Flamingo Estate's olives are grown on a multi-generational family-run farm, and are hand-selected at peak ripeness then pressed immediately to ensure critical freshness. This farm operates with organic, sustainable and biodynamic principles, honoring the link between people, the land, and the community. The paste from pressing olives is turned into natural compost tea to fertilize the trees and benefit pollinators. They also irrigate their groves with water from their pond, which is rich in soil-beneficial micro-organisms.

We took the Yucatan’s most emblematic Honey, made in collaboration with Mestiza de Indias in support of local Indigenous beekeepers, and infused it with Smoked Morita Chiles. The Honey is called Dzidzilché, foraged solely from Gymnopodium floribundum—a sacred tree native to the Peninsula. It is pure, monofloral, and intense, and when infused with the Morita Chiles, the result is an elixir drenched in a sweet, savory, smoked heat.
